ABV (Alcohol by Volume)

Alcohol by Volume, usually written as ABV or alc/vol, is the share of a wine's volume that is pure ethyl alcohol. It is the universal metric used on labels, technical sheets and trade documentation, and gives a quick indication of a wine's body, warmth and how it was made.

What ABV actually means

ABV is a simple ratio: litres of pure ethanol per 100 litres of wine, expressed as a percentage. A wine at 12.5% ABV contains 12.5 litres of ethanol in every 100 litres of liquid. The remaining volume is water, acids, sugars, glycerol, phenolics, aromatics and tiny traces of other alcohols and esters.

In the European Union, including the United Kingdom after Brexit, the actual ABV on a label may vary by plus or minus 0.5% from the figure stated, to allow for the small natural variation between batches. The strength is determined in the lab by either distillation followed by pycnometry, or by modern near-infrared instruments that compare a sample to calibrated standards.

How ABV shapes a wine

Alcohol has a real sensory effect. Higher ABV wines feel warmer, fuller and more viscous on the palate, and they carry more glycerol, which adds a slight roundness. Lower ABV wines feel lighter, more savoury, sometimes more transparent to terroir. Because ethanol is a strong solvent, it lifts aroma: a 14% Cabernet will smell more intensely of black fruit than an 11% Pinot from the same site, simply because more alcohol is pulling more volatile compounds into the headspace.

Winemakers target a specific ABV range to match the style. A bone-dry traditional method sparkling wine in the UK is usually finished between 11.5% and 12.5%, while a riper still Chardonnay or Pinot Noir from a warm vintage can climb to 13.5% or even 14% without losing balance, because cool nights preserve acidity.

ABV in the UK wine scene

UK vineyards have historically produced lower-alcohol wines than classic warm regions, simply because of the cool maritime climate and shorter ripening season. A typical English still wine in the 2010s might finish at 10.5% to 11.5%. As the climate has warmed, average ABVs have crept up. Vintages like 2018, 2020, 2022 and 2025 produced many wines in the 12% to 13.5% bracket, with some sunnier sites pushing towards 14%.

Producers targeting traditional method sparkling wine deliberately keep yields and ripeness in check so that base wines finish at around 10% to 11%, leaving room for the second fermentation in bottle to lift the final pressure-wine to roughly 12% ABV. This mirrors the logic used in Champagne, where a moderate base strength is essential for balance after the lique de tirage and lique d'expédition additions.

For low-alcohol and dealcoholised styles, UK producers have explored techniques such as reverse osmosis and spinning cone columns. These are niche, but they exist, and the resulting wines must still display a real ABV figure on the label so consumers can compare them accurately.

Where you will see it in the UK

Every bottle of still or sparkling wine sold in the UK must show the actual ABV to one decimal place on the front or back label. The same applies to bag-in-box, canned wines and PET. Trade buyers at merchants such as Berry Bros. and Corney & Barrow use ABV alongside price to position wines in their lists. At UK competitions including the International Wine & Spirit Competition and the Decanter World Wine Awards, ABV is read alongside residual sugar and acidity to classify entries into style brackets.

WineGB, the UK trade body, publishes annual statistics that group UK-produced wines by ABV band. These data show a steady rise in average strength over the past decade, which is one of the clearest signals of climate change on the English and Welsh wine map.
