Nyetimber: The Pioneer of England's World-Renowned Sparkling Wine

Tucked into the rural heart of the South of England, where chalk and greensand soils mirror those of northernmost Champagne, sits one of the most celebrated names in fine sparkling wine. Nyetimber is the estate that put English sparkling wine on the international stage, and it remains England's most awarded producer of traditional-method bubbles. From its historic vineyard at West Chiltington in West Sussex, every bottle of Nyetimber is grown, pressed, fermented, aged and bottled on estate land - a single-minded commitment to quality that has carried the brand from a pioneering first planting in 1988 to the pinnacle of the global sparkling wine world.

A Heritage Steeped in English History

The story of Nyetimber begins long before vines arrived on the estate. In 1086, the Anglo-Saxon settlement of Nitimbreha - believed to mean a newly timbered house or small plantation - was recorded in William the Conqueror's Domesday Book, making Nyetimber one of the oldest documented estates in England. From the medieval period through the early modern era, ownership passed through the Crown and prominent political figures including Henry VIII's chancellor Thomas Cromwell and Anne of Cleves, before the estate eventually transitioned to agricultural land.

The 20th century brought a radical reinvention. In 1988, Nyetimber became the first estate in England to plant the three classic Champagne grape varieties - Chardonnay, Pinot Noir and Pinot Meunier - exclusively for the production of traditional-method sparkling wine. This was a bold bet. At the time, England was not taken seriously as a fine-wine region, and the prevailing view was that only Champagne could produce world-class bubbles. Nyetimber set about proving otherwise.

Eighteen years later, in 2006, the entrepreneur Eric Heerema acquired the estate, recognising that the combination of historic site and ideal terroir had not yet been fulfilled to its potential. He recruited the married winemaking team of Cherie Spriggs and Brad Greatrix, both of whom shared his vision for crafting the finest English sparkling wines. The pair joined in 2007 after a bottle of Nyetimber gifted to Cherie by her parents revealed, to their trained palates, extraordinary promise. Since then, estate plantings have expanded roughly twentyfold to around 327 hectares in Nyetimber's care.

The estate's philosophy is captured in Heerema's much-quoted maxim: "I don't think in years but in generations." It is an ethos that has paid off handsomely in terms of international recognition.

The Estate and Vineyards

Nyetimber's home is its flagship estate at Gay Street, West Chiltington, West Sussex RH20 2HH, which includes the historic barns that now welcome visitors, the pressing centre, and the winery itself. Around this core sit the celebrated Tillington and Manor vineyards, along with an expanding network of parcels in neighbouring Hampshire and Kent.

Geologically, the estate sits on the same seam of chalk and greensand soils that runs beneath the English Channel to the Côte des Blancs in Champagne. The gentle south-facing slopes maximise sun exposure, while proximity to the south coast moderates the climate, allowing grapes to ripen slowly and retain the crisp natural acidity that is the hallmark of fine sparkling wine. Most vines are now well into maturity, with some of the oldest Chardonnay, Pinot Noir and Pinot Meunier plantings in the country.

A new pressing centre at West Chiltington can be reached via the estate's own tracks, reducing road traffic in the village. The building generates a portion of its own electricity from photovoltaic cells and recycles rainwater. Within the winery, energy from cold stabilisation and the heat of fermentation is captured and reused, reflecting Nyetimber's holistic approach to sustainability.

The Art of Traditional-Method Winemaking

Every Nyetimber wine is made exclusively from estate-grown fruit - no bought-in grapes, no bulk juice. Each parcel is hand-picked at optimal ripeness, gently whole-bunch pressed and vinified separately in stainless steel tanks. This parcel-by-parcel approach gives Head Winemaker Cherie Spriggs a palette of base wines from which to blend the following spring.

All Nyetimber wines are produced according to the traditional method: secondary fermentation takes place in the bottle, followed by extended lees ageing and post-disgorgement maturation. The minimum cellar time across the range is 36 months, with the prestige cuvée 1086 by Nyetimber enjoying considerably longer. Bottles are aged between 12 and 13 °C, shielded from light and vibration in dark amber glass - a Nyetimber first among English producers.

Riddling is carried out on state-of-the-art gyropalettes, and disgorgement freezes the lees into a solid plug that is ejected under pressure before the liqueur d'expédition and final cork are inserted. Every bottle carries transparent information about varietal blend, vintage composition, bottling, riddling and disgorgement dates - unusually full disclosure for the wine industry.

The Nyetimber Range of Sparkling Wines

The current Nyetimber range consists of seven core cuvées, each crafted to showcase a different facet of the estate's terroir and house style.

Classic Cuvee Multi-Vintage

The flagship wine and the entry point to the Nyetimber world. A classic blend of 55 - 65% Chardonnay, 30 - 40% Pinot Noir and 5 - 15% Pinot Meunier, drawn from multiple vineyards and vintages, then aged for more than three years on lees. Pale gold with a fine, persistent mousse, the Classic Cuvee shows toasty, spicy aromas with honey, almond, pastry and baked apple on the palate - intense yet delicate, elegant yet complex. Recommended pairings: smoked salmon, oysters, scallops, asparagus and sushi. £42 per bottle.

Rosé Multi-Vintage

A sunset-pink multi-vintage rosé that captures the English summer in a glass. Made from 45 - 75% Chardonnay, 25 - 55% Pinot Noir and a touch of Pinot Meunier, the wine combines aromas of British summer fruits and shortbread with a creamy, round texture and refreshing redcurrant, raspberry and cherry flavours. Pair with salmon fillets, brown crab, veal carpaccio or guinea fowl. £47 per bottle.

Cuvee Chérie Multi-Vintage

Nyetimber's celebrated demi-sec, the first of its kind ever produced in England. A 100% Chardonnay wine with 38 g/L residual sugar, it offers light golden hues, lively sweet-lemon character, honey and a tangerine hint, balanced by crisp acidity and a clean, pure structure. The versatile Cuvee Chérie is a perfect partner for strawberries and cream, fruit tarts, afternoon tea, meringue dishes, Asian cuisines and foie gras. £42 per bottle.

Blanc de Blancs 2017

A pure 100% Chardonnay single-vintage wine given extended lees ageing - the first style ever produced at Nyetimber. The current 2017 vintage carries on a remarkable tradition that, in 2025, saw the Blanc de Blancs 2016 Magnum become the first non-Champagne wine ever to win the IWC Champion Sparkling Wine Trophy. Aromas of lemon curd and greengage are joined by clotted cream and shortcrust pastry; the palate delivers fresh citrus, gooseberry, apple crumble and a distinctive flinty mineral character, finishing long, creamy and saline. Pair with white crab, Dover sole and mussels. £58 per bottle.

Tillington Single Vineyard 2016

A rare and refined 73% Pinot Noir / 27% Chardonnay expression of one of Nyetimber's most celebrated single vineyards in West Sussex, on greensand soils, aged for around 60 months on lees. Pale gold with very fine bubbles; aromas of raspberry, red apple skin and rose petal give way to orange zest, apricot and marzipan on a vibrant, opulent palate. An ideal wine for monkfish, John Dory or lobster. £110 per bottle.

1086 by Nyetimber

The pinnacle of Nyetimber's winemaking and England's first prestige cuvée, released from the 2009 vintage onward and named for the year the estate first appears in the Domesday Book. The 2013 vintage currently in the range is a 51% Chardonnay, 40% Pinot Noir and 9% Pinot Meunier blend aged extensively on lees, showing rich red apple, peach and white rose petal, with almond and clotted cream on a long, refined finish. Pair with caviar, lobster, turbot, scallops, sashimi or oysters. £150 per bottle; magnum and jeroboam formats available.

1086 by Nyetimber Rosé

The pinnacle expression of Nyetimber's rosé portfolio. The 2013 vintage (64% Pinot Noir, 36% Chardonnay) opens with wild strawberry, red apple and floral aromas, joined by chantilly cream and hints of freshly baked brioche in a lingering finish. Unapologetically opulent with refined bubbles, it is the perfect match for duck breast, veal carpaccio, steak tartare, lobster bisque or grilled octopus. £175 per bottle.

Large Format Bottles

For celebrations that demand centrepiece presence, Nyetimber produces magnums and jeroboams of its flagship wines. Magnums (1.5 L) include the Blanc de Blancs 2017 (£130), Classic Cuvee Multi-Vintage (£85), Classic Cuvee Vintage 2010 (£95), 1086 by Nyetimber 2013 (£325) and 1086 by Nyetimber Rosé 2013 (£375). Jeroboams (3 L) of Classic Cuvee Multi-Vintage are priced at £223, and the 1086 by Nyetimber 2013 Jeroboam is £725.

Sustainability and Corporate Responsibility

Nyetimber's approach to sustainability is rooted in the landscape. Around 30% of the estate is managed as natural, non-productive habitat - native broadleaved woodland, wildflower meadows, hedgerows, windbreaks, ponds and ponds. Sheep from a local West Sussex farm graze selected vineyard blocks in winter as an alternative to mowing, naturally fertilising the soil and reducing tractor use. Drones map vine health row by row, insect traps target specific pests, and Nyetimber is a member of a six-producer research consortium that works with East Malling Research on herbicide-free viticulture trials.

Since 2008 Nyetimber's glass bottles have weighed 835 g, some 10% lighter than the industry standard of 905 g - reducing journeys, fuel and emissions. The foil capsule on every bottle uses a plant-derived laminate between two thin aluminium layers, and the energy captured during cold stabilisation and fermentation is recycled within the winery.

The estate also supports a wide range of charitable and educational partners, including the South Downs National Park Trust, WSET School London, Le Cordon Bleu London, Plumpton College, the Shipley Arts Festival, Friends of Sussex Hospices and The Mary How Trust. In education, Nyetimber annually hosts Educational Days for viticultural students and provides in-depth training packages across marketing, sales and operations.

Awards and Accolades

Nyetimber has won more top-level sparkling wine trophies than any other English producer. The estate has been named IWSC English Wine Producer of the Year eight times, and was a Bollicine del Mondo Champion Trophy winner in 2009 - the first British producer ever to claim the award.

In September 2025, Nyetimber's Blanc de Blancs 2016 Magnum became the first non-Champagne wine to win the Champion Sparkling Wine Trophy at the International Wine Challenge, scoring 97 points and described by the judges as "a time capsule of a wine with mouth-watering acidity, citrus zest and camomile, with a chalky finish." At the same awards, Head Winemaker Cherie Spriggs won Sparkling Winemaker of the Year for the second time, having become the first person from outside the Champagne region - and the first woman - to win the award in 2018.

The trophies kept coming in 2026: Nyetimber was named Winery of the Year Great Britain by The Real Review - the first English winery to win the title in two consecutive years - while the 1086 by Nyetimber 2014 was named Sparkling Wine of the Year with 97 points.
