Biodynamic Viticulture

Biodynamic viticulture is a system of farming based on a series of lectures given by the Austrian philosopher Rudolf Steiner in 1924. It treats the vineyard as a single living organism, uses specially prepared preparations to enhance soil life, and times certain tasks to lunar and planetary rhythms. Several UK estates are certified biodynamic or follow biodynamic principles without full certification.

The origins

In 1924, a group of European farmers asked Rudolf Steiner, founder of Anthroposophy, what to do about the rapid decline in soil fertility and seed quality they were seeing on their land. Steiner gave eight lectures, published as the Agriculture Course, which became the foundation of biodynamic farming. The first preparations, numbered 500 to 508, were recipes for fermented cow manure, quartz and herbal teas applied in very small doses to soil and crops.

By the 1980s, biodynamic viticulture was firmly established in Alsace, Burgundy and the Loire, with names like Domaine Leflaive, Domaine de la Romanée-Conti and Nicolas Joly as its champions. From there it spread across Europe and the New World, and into the UK in the 2000s.

What actually happens in the vineyard

The two key preparations are 500, made by stuffing cow horns with fresh cow manure and burying them over winter, and 501, made by stuffing horns with ground quartz and burying them through summer. Both are dug up, diluted in water and sprayed on the vineyard in homeopathic-style doses. Other preparations use yarrow, chamomile, stinging nettle, oak bark, dandelion, valerian and horsetail, each prepared in a specific way and applied to compost or directly to the vines.

In addition, the biodynamic calendar divides days into root, leaf, flower and fruit days, based on the moon's position relative to the zodiac. Pruning, spraying, harvesting and even bottling are timed to these days. Critics call it pseudoscience. Practitioners reply that the cumulative effect of better soil life and tighter observation outweighs the calendar.

Biodynamic UK vineyards

The most prominent UK biodynamic estate is Avondale in South Africa, but the UK has its own examples. Ancre Hill in Monmouthshire has been biodynamic since 2009, producing sparkling and still wines from Chardonnay, Pinot Noir and Seyval Blanc. Davenport Vineyards in East Sussex, run by Sam and Will Davenport, follows biodynamic principles and produces the Limney estate wines from their Horsmonden site. Several other small estates, including Greyfriars in Surrey and Oxney Organic in East Sussex, are certified organic and biodynamic.

Certification is run by Demeter UK, the biodynamic arm of the Soil Association. To carry the Demeter logo on a label, a vineyard must complete a three-year conversion period, document every input and pass an annual inspection.

Why UK growers are interested

The cool, damp UK climate is a disease-pressure environment. Downy mildew and powdery mildew are constant threats, and conventional viticulture in the UK is among the most sprayed in the world, often 10 to 14 sprays per season. Biodynamic and organic growers argue that healthier soil, deeper roots and more diverse microbial life make vines more resilient. The empirical evidence in the UK is still thin because the industry is young, but early adopters report reduced mildew pressure and better soil structure after a few years of conversion.

There is also a marketing logic. The UK organic and biodynamic wine category is small, but it commands a clear price premium and a loyal following at retail. Waitrose, Abel & Cole and the better online specialists all stock at least one or two English biodynamic wines.

Criticisms and evidence

Mainstream science is sceptical. The lunar calendar effect on plant growth has not been convincingly demonstrated in controlled trials, and the homeopathic dilutions used in the preparations are so weak that no active ingredient remains. Soil health improvements under biodynamic management can usually be replicated by organic farming, leading some researchers to argue that the calendar and preparations add cost without clear benefit.

Producers respond that the calendar simply makes the team more deliberate, and that the preparations act more as a ritual focus for the farm organism than as a chemical input. The wines from top biodynamic estates are often superb, but most neutral observers put this down to the extreme care and low yields that biodynamic farming demands, rather than the preparations themselves.
