The Wines

Dedham Vale's wine collection is built around a small, deliberately curated range of still and sparkling English wines. Each label is themed around the landscape: coastal light for the Bacchus, evening glow for the rosé, water and willow for the white blend, and the timeless tradition of méthode traditionnelle for the sparkling. All are crafted in small batches at the on-site winery.

Colchester Oyster 2024 & 2025 - Bacchus, £17.50

The flagship white is Colchester Oyster, an expressive single-varietal Bacchus named in tribute to Colchester's historic oyster fishery. With a pale gold colour, it bursts with aromas of elderflower, gooseberry and fresh lime, leading to a vibrant palate of citrus and tropical notes and a crisp, lingering finish. The Painter's Light is a delicate, fruit-forward English rosé made from Pinot Noir Précoce, capturing the soft glow of evening light that bathes the vines in rose and gold. Wild salmon pink in the glass, it offers aromas of wild strawberry and red currant with a strawberries-and-cream palate and a dry, crisp finish. Willow Lake 2025 - Albariño & Orion, £17.50

Willow Lake is a fresh and elegant white blend built on Albariño and Orion. The wine takes its name from the part of the estate where willow meets water in still reflection. The Dedham Vale Classic Cuvée is a traditional-method English sparkling wine crafted from Chardonnay, Pinot Noir and Reichensteiner, one of the estate's German varieties. It is aged on the lees for 21 months, which builds texture and a subtle richness without losing the wine's bright, herbaceous character. Pale gold with fine, persistent bubbles, it offers green-apple and citrus zest aromas with subtle brioche notes from lees ageing, a delicate mousse and vibrant acidity, and a lingering citrus-and-toast finish. Stay With Us: Vineyard Cottages in Essex

The estate plans to launch two countryside holiday cottages, both dog-friendly and both scheduled to be available from 2027. Each is self-catered and equipped with a TV, oven and microwave, and both include a delicious breakfast hamper to help start your stay. Dogs are welcome, but owners are asked to let the team know in advance and to keep pets off the beds and out of the bedrooms.

Wine Maker's Cottage - £225.00

A one-bedroom cottage designed for a cosy and comfortable stay for couples or solo travellers. It is one of two properties planned for launch.

Willow Lake Cottage - £275.00

A larger two-double-bedroom cottage with a welcoming living space featuring a traditional log burner and a private terrace overlooking the lake - ideal for a morning coffee or an evening glass of wine as the sun goes down.
